Tasmanian truffle mustard made with fresh Tasmanian truffles. The mustard is very versatile; A perfect condiment for a wide range of dishes. Perigord truffle products are made from fresh Tasmanian truffles harvested through the winter months.

The product contains locally produced Tasmanian truffles with no added artificial aromas.

Perigord Truffles of Tasmania was established in 1993 by Duncan Garvey.

It all started in the early 1990’s when Duncan overheard a conversation in a café where a couple were talking about a French truffle experience in a Paris restaurant.  They spoke about the intriguing flavour of the truffle and how the whole restaurant was filled with the intoxicating perfume of the truffle and most importantly how they were only available in the Northern Hemisphre winter. This was the start of Duncan’s truffle journey which resulted in the harvesting of Australia first truffle in Tasmania on June 18th 1999.

He critically reviewed literature on truffles, made a numerous of trips to France to research truffles and conducted market research in Europe, Japan and the United Kingdom.

Perigord Truffles of Tasmania was formed in 1993 and successfully established trufferies in Victoria and NSW and oversaw the first truffles harvested in both states.

In recent years Duncan’ focus has been on supplying Australia’s leading chefs with fresh Tasmanian truffles weekly through the winter and establishing an online platform where truffles are delivered direct to homes in Australia, Singapore and Hong Kong.
